Made with delicious short crust pastry and generously filled with our multi award winning Lincolnshire Sausage Meat, which is handmade by Russell using an authentic Victorian Recipe. The Sausage Rolls are then glazed with local free range egg and baked ready for you to enjoy.

These are made by hand using short crust pastry and filled with top quality steak and gravy. Ideal for a traditional family dinner or a splendid and easy to prepare meal whilst staying in your holiday caravan.

A traditional Lincolnshire Speciality. Hand made by Russell in the shop with best quality pork and then gently roasted - absolutely scrumptious in a sandwich or as part of a salad.

Hirst's Heritage Hand Raised Pork Pie

2012-14 County Foods Bronze Award

Hirst's Heritage Hand Raised Pork Pie is made by Sadie the old fashioned way, hand raised on a "dolly". They are a very traditional farmhouse style pie, with the meat perfectly seasoned by Russell. Sadie glazes the pie with local free range egg to give a wonderful biscuity finish to the pastry. They are baked and jellied ready for you to enjoy. Like the Pork and Red Onion Marmalade Pies it is advisable to order these either from the shop or the market as the sell out very quickly indeed.

Hirst's Hand Raised Pork and Red Onion Marmalade Pie

Hirst's Hand Raised Pork and Red Onion Marmalade Pie. Sadie makes these with the same delicious hot water pastry as the Traditional Pork Pie, but the meat has a kick of black pepper and onion. Sadie makes her home made Red Onion Marmalade and this is added in a couple of layers with the meat, this all bakes together making a really flavoursome pie.  These have gathered quite a following and it is advisable to order them in advance to ensure you get one!
 

Lincolnshire Stuffed Chine

One of the speciality dishes that is most associated with the county. The chine is stuffed, prepared and baked by Russell using a 1930's Wrawby WI recipe,  the recipe is likely to be much older than its appearance in the book. Chine is tradionally served with vinegar and graces many tables for Harvest Festivals.

Lincolnshire Sausages

2012-14 County Foods Silver Award

Made daily by Russell using a Victorian Recipe, which was handed down to him. All of the meat is prepared using best quality pork and contains no additives, artificial preservatives or colours. Quite often you can come into the shop and find Russell making his sausages on the machine that looks a bit like a rocket!

Russell and Sadie have earned an excellent reputation with their customers for supplying only the very best quality meat. Now more than ever the word "traceability" is meaningful, with all of their meat able to be sourced back to its origin.

Come and choose from a delicious selection of meat on display in the chilled cabinet.

Russell prepares all joints of meat freshly when he has ascertained your exact requirements, such as how many people you wish to feed or what recipe you are trying out. He will expertly advise you on the best cut of meat for the job.

The chickens are fresh, free range and corn fed.  Game, such as pheasants are stocked when in season.

Steak Burgers

2012-14 County Foods Gold Award

These are made by Russell using only top quality beef and onion with a cracked black pepper seasoning. These are so popular they are available all year around.
 

Minty Lamb Burgers

Made with succulent lamb and seasoned with sweet mint, something a little bit different for your BBQ. These too are available all year around, due to high demand.
 

Pork and Apple Burgers

Hand made by Russell  using best quality pork and complimented with a lovely sweet apple flavour and seasoning.
 

Chinese Pork Ribs

Ideal for the BBQ or just as tempting done in the oven. These ribs are marinated in an authentic Chinese sauce.
 

Peppered Pork Steaks

Loin of Pork Steaks with a pepper coating that gives a bit of a "kick", very tasty and available throughout the year.
 

Gourmet Kebabs

Russell makes a variety of kebabs such as Lamb and Mint, Chicken and Garlic and Peppered Steak. Packed full of meat and perfect to BBQ.
 

Duck Breast in Plum Sauce

Suitable for your BBQ or delicious pan fried. These high quality duck breasts are very versatile. Also available without the marinade.

We are delighted to be stocking local Lincolnshire Rapeseed Oil made by Ownsworth in Fulbeck. Available in two sizes, this oil is delicious, local and versatile. A real alternative to Olive and Vegetable Oil.

Saints and Sinners Award Winning Jams, Chutneys and Mustards

 

Saints and Sinners -quality preserves from Lincolnshire

Passionate about preserving and living in one of the best growing areas in the country, Saints & Sinners produce a range of over 150 different genuinely homemade preserves. All of their goods are made in their home kitchen using traditional methods, in batches of 9 or10 jars ensuring freshness is the key. They work closely withWoodlands Organic Farm in Kirton thus reducing their wastage and they also work with Fenberry Fruit in Bicker to provide the more unusual fruit and vegetables they use. These products are delicious and local. The horseradish mustard goes particularly well with our Pork Pie and Sausage Rolls. Pocklington's Bakery - Gold Award Plum Bread

Pocklington's Bakery Famous Plumbread

Their Traditional Plumbread is based on a recipe used by Myra Pocklington in the early 1930's to feed the farm workers on the family farm. Covered in home churned butter, she would take it out to the farm hands in the fields at break time.

Their Plumbread is just fantastic with butter, toasted, with cheese or even in a bread and butter pudding. All their Plumbread is so moist that it can also be sliced and eaten without any spread.

Local Free Range Eggs

Farm eggs    Local Free Range Eggs from Fairburn's and Extra Large Eggs from Bells farm just on the outskirts of Horncastle. All eggs are fresh, local and free range.
 

Patteson's Chutney

Made in the north of the county. Their chutney is the perfect match for a slice of dry roasted ham.
 

Curtis's of Lincoln

A very long established baker in the county, they provide the shop with a range of jam tarts, pastry and cakes.
 


FARMERS' MARKETS: PRODUCT RANGE

Sadie joined the Farmer’s Market in Horncastle in April of last year. It is held every fourth Saturday in the month. Come and visit her stand, situated on the triangle outside of Perkins, she will be bringing with her an array of scrumptious award winning produce.

Sadie will also have available chilled Lincolnshire Sausages. If you would like any orders from the shop bringing over to the Farmers Market for collection, please just ring or email your order over.

Sadie looks forward to welcoming you to her stall, be sure to come early as she sells out fast!

Haslet

2012-14 County Foods Silver Award

This Lincolnshire Speciality is made and baked daily by Russell in our shop in woodhall Spa. Russell makes the Haslets using only the best cuts of pork, containing no offal, colourings or artificial preservatives. Delicious thinly sliced in a sandwich, part of a buffet a table or in a salad.
 

Hand Raised Pork & Red Onion Marmalade Pie

Following the success of the Pork Pie, Sadie also makes a delicious Pork and Red Onion Marmalade pie. Made the same way as the Traditional Pork Pie, but with a twist of cracked black pepper and robust onion seasoning with the meat. They have a layer of Sadies' delicious home made red onion marmalade running through the centre and on the top. These are already gathering quite a following.
